Hearty Vegetable Stew (Optional Beef)

Serves: 6

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients

  • 2–3 potatoes, diced

  • 2–3 carrots, sliced

  • 1 yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 stew pack of vegetables (turnip, celery, parsnip, cabbage, etc.), chopped

  • 1 cup corn kernels

  • 6 cups water

  • 2 beef bouillon cubes (or vegetable bouillon for vegetarian option)

  • 1 tbsp oil or butter

Optional:

  • 1–1.5 lb beef stew meat, cubed

  • Seasonings to taste: bay leaf, thyme, parsley, black pepper, paprika

Instructions

  1. Prep Ingredients : Wash, peel, and chop all vegetables into bite-sized pieces.

  2. Combine in Pot : In a large soup pot, add all vegetables, corn, water, bouillon cubes, and oil/butter.

    • If using beef: add raw cubed beef directly into the pot with everything else.

  3. Cook the Stew : Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 50–60 minutes, stirring occasionally.

  4. Check for Doneness : Vegetables (and beef, if added) should be fork-tender. Taste and adjust seasoning as needed with extra salt, pepper, or herbs.

  5. ServeLadle hot stew into bowls and serve with bread, biscuits, or rice on the side.

Notes

  • To thicken the stew, mash a few potato chunks into the broth before serving.

  • For a brighter flavor, stir in a squeeze of fresh clementine or lemon juice before serving.
