Pork Roast Vegetable Stew

Ingredients

  • 1 pork roast (about 1.5 lb), cut into cubes

  • 10 cups of water

  • 4 carrots, cut in half

  • 3 celery stalks, diced

  • 3 small onions, quartered

  • 2 handfuls of yellow beans

  • 1 turnip, diced

  • 1 cabbage, chopped

  • 7 to 11 potatoes, diced

  • 6 tbsp beef Bovril (or to taste)

  • ½ tsp thyme

  • 1 bay leaf

  • Salt and pepper

Instructions

  •  Coat half of the pork cubes with flour and brown them in a pan.

  •  Place the meat in a large pot with the water, Bovril, onions, celery, thyme and bay leaf.

  •  Simmer for 3 hours on low heat.

4. Add the vegetables

  • Add the turnip and carrots; cook 15–20 min.

    • Add the potatoes; cook 30 min.

    • Add the yellow beans; cook 15 min.

    • Add the cabbage; cook 15–20 min.

5. Finish

 Season with salt and pepper.
