Pork Roast Vegetable Stew
Ingredients
1 pork roast (about 1.5 lb), cut into cubes
10 cups of water
4 carrots, cut in half
3 celery stalks, diced
3 small onions, quartered
2 handfuls of yellow beans
1 turnip, diced
1 cabbage, chopped
7 to 11 potatoes, diced
6 tbsp beef Bovril (or to taste)
½ tsp thyme
1 bay leaf
Salt and pepper
Instructions
Coat half of the pork cubes with flour and brown them in a pan.
Place the meat in a large pot with the water, Bovril, onions, celery, thyme and bay leaf.
Simmer for 3 hours on low heat.
4. Add the vegetables
Add the turnip and carrots; cook 15–20 min.
Add the potatoes; cook 30 min.
Add the yellow beans; cook 15 min.
Add the cabbage; cook 15–20 min.
5. Finish
Season with salt and pepper.
